Braised Seafood with Tofu in Casserole (海鮮豆腐煲)

Ingredients:

2 boxes of soft tofu (or fried bean curd instead)

100g of squid or calamari

28 pieces prawn or shrimp

200g fresh fish filet (suggest: sea bream fillets)

2 shallots (green onion)

A slice of ginger

3 fresh mushrooms

Some broccoli

1/2 head cabbage

Seasoning:

a small bowl of cornstarch,

1 cup of the seafood broth

1 tsp sesame oil,

1 tbsp oyster sauce

1 tbsp soy sauce

rice wine

Method:

1.     Preparation: the ginger slices, diced mushrooms, onions and cut tofu into cubes or triangles, squid slices, shell shrimp/prawn ( leaving tail), sea bream fish slices.

2.     Marinate the seafood:  take a bowl to combine rice wine, a pinch of salt, black pepper and a egg yolk.

3.     Start from water-boiling pot, adding an appropriate amount of salt, add tofu and boil hot, fry drained, add a little olive-oil in same pot, add cabbage, broccoli , drained ready to use and set aside. (Keep the soup for later use).

4.     Take another pan to heat it up. Heat up an amount of oil in a preheated work. Sequentially fry tofu, sea bream fillets, calamari/ squid, prawn , one-by-on in order. Drained ready to use. Set aside.

5.     Preheat casserole. The bottom layer is placed the cabbage. And adding the soup from step 3. Now combine all the sea foods from above step-4. Cover, reduce heat, and simmer 3-5 minutes then garnish with broccoli. Serve hot.
