Fresh Spring Rolls (10 servings)

The Fresh Spring Rolls are a refreshing change from the usual variety, and have become my family favorite. They are great as a cool appetizer or starters, and are delicious dipped in one or both of the sauces, or without any sauce. Since they were highly pular  IWCC's philanthropic fundraising of the Spring Fair on 26th of March, 2011, I have no reason to keep it secretly.

Recipe of "Fresh Spring Rolls"
Servings: 10 ups
Prep Time: 45 min // Cook Time: 5min // Ready In: 50 Min


Ingredients:

  • 8 rice wrappers (8.5 inch diameter)
  • 2 package (200g) silk noodle (green bean noodle)
  • 2-3 eggs (fried egg/omelette)
  • 1 box (400g ) cooked-sour-salted, Giant Tiger Prawns
  • 1 carrot, julienned & pickled (pickled by vinegar and a bit sugar)
  • 1 box Baby Leaves (3-4 salad vegetables)
  • 2 Kiwi fruit (peeled and sliced)
  • 1/4 cup fresh cilantro leaves
  • 1/2 cup sweet chili sauce or fish sauce
  • 1/2 rice vinegar/ fruit vinegar/ fresh lime juice
  • 1/2 tablespoon sesame oil
  • a pinch of sugar
  • water as needed

Directions

  1. Place the silk noodles in a large bowl of hot water until cooked, about 3-5 minutes. Drain and rinse with cold water.
  2. Fried egg (omelette): chopped it into small pieces. put aside for cooling. Fill a large bowl with warm water. Dip one wrapper into the warm water for 2 second to soften. Lay wrapper flat (or place the sheets on a large dish cloth). In a row across the center, place a handful of baby leaves into the center of each wrapper. Place some chopped fried egg over the the baby leaves, top with a small handful of the noodles, 2-3 slices of pickled carrot, 1/4 kiwi and 10 prawns. In the end, a drop of sesami oil inot the ingredients.
  3. Roll them, burrito style, by folding the bottom of the wrapper over the filling in the center. Fold in the left and right sides, then roll the entire thing away from you tightly.
  4. Increasing flavor: Mixed 1 tablespoon of cold water, ½ tablespoon rice vinegar (or lime juice) and a pinch of sugar. Dig each fresh spring roll into the bowl for a second to get improving the flavor. (Noted: you may save this step from seasoning).
  5. Season to taste with sweet chili sauce (or fish sauce), and garnish with cilantro leaves.
